History of apples

Its primary wild ancestor is Malus sieversii whose range is centered at the border between western China and the former Soviet Union originated 4000 to 10000 years ago. This species is diverse and wild trees bearing the full range of forms, colors, and tastes are found in Kazakhstan and other independent countries of Central Asia formed from the breakup of the Soviet Union.

The cultivated apple then underwent hybridization with its wild relatives during its spread from the Tian Shan Mountains westward along the Silk Route.

Apples were certainly one of the earliest fruits to be gathered by people, and their domestication was probably preceded by a long period of unintentional planting via garbage disposal.

Based on combined archaeological and molecular data, it seems likely that, in the late Neolithic or early Bronze Age, travelers on the great trade routes that ran from central China to the Danube, carried the seed of the Central Asian wild apple west, either in saddle bags or horses’guts.

It was known to the Greeks and Romans and mentioned by Theophrastus in the third century BC. It is difficult to determine exactly when the apple was first domesticated, but the Greeks and Romans were growing apples at least 2,500 years ago. They actively selected superior seedlings and were budding and grafting 2,000 years ago.

Grafting is a practice that is thought to have begun about 3800 years ago based on a cuneiform description of budwood importation for grape in Mesopotamia. Indirect evidence has been obtained for the cultivation of apples 3000 years ago in Mesopotamia.

The Romans probably learned apple grafting, cultivation, harvesting, and storage from the Greeks, and brought the production chain technology to the rest of their empire.

The Romans brought the whole package to Western Europe and, for the last 2000 years, the domesticated apple has diversified and flourished worldwide. It was dispersed to the New World by European settlers during the sixteenth century.

Canning process: Apple slices

Apples for processing should be sound, mature, reasonable size, and of uniform shape to be peeled. Apples for canned slices must be firm, maintain integrity of the flesh when sliced, and have good color. York, Stayman, Golden Delicious, Northern Spy, Rhode Island Greening, Yellow Newtown, and Jonathan are preferred for making slices.

The stem tips were removed and fruits immersed in chlorinated water (300 ppm) for 20 min. Fruits were either subjected to hand peeling, steam peeling or lye peeling. In steam peeling, the fruits were exposed to live steam at 100 °C for 6-8 min. Fruits were also soaked in either 5 or 10% lye solution for 30-60s at 28-3 °C.

The slicing operation is usually an integral part of the peeling and coring process where the apples are sliced into 12 to 16 pieces in the coring section. After slicing, the apples are inspected for defects such as blossom or calyx, carpel tissue, skin, and bruises and are conveyed over a shaker screen to remove small chips. Apple slice texture is very important. Therefore, apples with firm flesh and high quality are desired. Consistency of slice size can be controlled by using fruit from within a preselected size range.

Adding syrup to canned fruit helps retain its flavor, color and shape. It does not prevent spoilage of these foods. By using syrups offer a new “very light” syrup, which approximates the natural sugar content of many fruits.

In canning regular fruits without sugar, selecting fully ripe but firm fruits of the best quality is very important. Prepare these as for hot-packs but use water or regular unsweetened fruit juices instead of sugar syrup. Juice made from the fruit being canned is best. Blends of unsweetened apple, pineapple and white grape juice also are good for filling over solid fruit pieces.

The canned apples must be processed immediately after closing to a can center temperature of 82.2°C; there are several types of sterilizers available, Batch retort vessels, and continuous rotary cookers that operate either at atmospheric or pressurized conditions. Immediately after sterilizing, the cans should be cooled at 37 to 40°C to prevent “stack burn” or loss of product color in storage.

Apple variety: McIntosh

The McIntosh apple is a hero to some pie makers and a villain to others. The controversy centers on its white finely textured flesh which becomes very soft in the baking - the sort of mushy soft that some people adore and others despise.

The McIntosh had been around for a long time. Named for John McIntosh who discovered it as a seedling on a partly overgrown farm in Dundas County in Ontario around 1811 the McIntosh proved to be an exceptionally hardy apple.

Instead of tossing the tiny trees onto a pile of brush that would later be burned, he transplanted them to a nearby garden.

Although John, his wife and two sons, Allan and Sandy, had been operating a nursery primarily for the sale of the McIntosh apples since the mid-1830s, it took until the 1890s before the variety became popular.

McIntosh apples are relatively less susceptible than Golden Delicious apples to changes in color and to development of shriveling when stored under similar conditions. McIntosh is a hardy apple producing quality dessert apple with firm, crisp, and tart flavor.

This apple has a bright red skin sometimes tinged with green. Its flesh is medium-crisp and juicy and its flavor is tartly sweet and perfume.

Pectin in fruit

Pectin is a plant cell wall polysaccharide consisting of a linear chain composed of D-galacturonic acid residues linked via α(1-4)-glycosidic bonds. Pectin or pectin solutions may be manufactured or obtained from dried apple peels and cores.

When pectin molecules come in contact with fruit acid, chainlike structures in the pectin become charged and these chain fold in on themselves. The folded chains trap water from the fruit or juice, forming gel.

Fruit contains pectin substances in a form that is not water dispersible and in this form cannot be used for the manufacture of jams, jelly, and other foods.

Pectin, which is released from the middle lamella of apple cell was by the mechanical action of milling and pressing is present in all fresh apple juices to a varying extent.

In early season fruit, amounts of soluble pectin may low, in the order of 0.1% by weight of juice. In later fruit, or in fruit from cold store, pectin may rise as high as 1-25% in the juice.

Commercial pectin comes in two forms, liquid and powdered. Liquid and powdered pectins are not interchangeable. Each requires a different balance of fruit, sugar and acid to attain the proper set.

Cultivation of apple

The cultivated apple probably originated in southwest Asia where forests of wild Malus species were known to grow.

The apple has been cultivated in Europe and Asia for many hundreds of years but wild apples were eaten long before attempts were made to domesticate them.

Standard trees moderately vigorous, upright-spreading, spurring fairly, freely and basitonic.

Widely adaptable, but performs best in areas with warm summers, high light intensity and adequate water-supply.

An apple tree can be grown from an apple seed, but because cultivated apples are hybrids, the offspring will probably resemble the wild apple.

Cultivation is practiced only in young plantings when land has been cleared from woods or when an old orchard site is renovated.

The land must be fairly level and free of the tendency to erode. It is essential that the soil be so managed as to prevent the competition of other vegetarian near the trees during the first few years they are in the orchard.

Apple Folklore Many myths and legends are associated with the apple. Apples were frequently used in Greek, Roman, Norse and other mythologies as symbols of immortality or reincarnation. They are the food of the gods/goddess or are given to humans by deities as rewards for various acts. The Name of Apple

The Name of Apple
Scientific names generally consist of two italicized words, the first denoting the genus, the second a species within that genus.

For apple, Malus domestica is the name for the cultivated apple, where Malus is the genus and domestica the species name.

In Latin, Malus is a noun meaning “apple” or alternately, “evil,” “bad,” “or “wrong.” The dual meaning probably stems from the biblical story of Eve and the forbidden fruit in the Garden of Eden.

The species name domestica is a n adjective meaning “around the house” thus, the entire name translates roughly to the domesticated apple.

Neither of the words that the ancient Romans had for apple-malum and pomum – are the source of the English name of this fruit. Instead, apple derives from a Germanic source, one likely related to Avella the name of famous fruit growing region in Italy; however whether the region was named after the fruit or the fruit after the region, is unknown.

In English, the word apple was first recorded in the ninth century, but at that time, and for centuries after, it was used to refer not only to apples in particular, but also to fruit in general: Aelfric, for example, the greatest prose writer of Old English, even referred to the cucumber as an apple.

Last, but not least, someone always has to take credit for things, so the authority is tacked in the scientific name, denoting the person who named the plant.

In the case of apple, it was a botanist named Borkhausen, so the precise full name for apple is Malus domestica Borkh.

Apple and related fruits belong to a special fruit type – the pome. The bulk of the fleshy edible portion derives from the hypanthium or floral cup, not the ovary.

The fruit is five locular containing five seed cavities with generally two seeds each. Seeds are relatively small, black, and mildly poisonous.

Fruiting begins 3 to 5 years after budding, although a few fruits may be produced the second year.

This varies with rootstock. Fruits should be removed from the upper part of the central leader of young trees to encourage growth and prevent leaning.

Fruit are usually thinned to one per spur, with spurs spaced 4 to 6 inches for attainment of marketable size.

Fruit derived from the central flower or king bloom are preferable to retain since they have greater size potential. Apples are generally thinned with chemicals such as the insecticide or it synthetics.

The materials are applied postbloom and cause abscission of developing fruitlets until they reach a size of about 1 inch in length.

Chemical thinning is less expensive than hand thinning, but very dependent on weather during and shortly after chemical application.
